Why More Professionals are Choosing Bamboo Cutting Boards

The debate over which cutting board material is best for your kitchen continues to be debated. The opponents are wood, which includes bamboo, versus plastic. The main issue is whether a board can be effectively cleaned  so that the cutting board does not harbor bacteria which has the potential of contaminating other foods and elements that touch that cutting board.

This continued debate prompted the University of California, Davis (UCD) to conduct their own research to ultimately address this issue. Researchers discovered that U.S. Department of Agriculture's (USDA's) Meat and Poultry Inspection Manual and the FDA's 1999 Food Code, which outlined regulations for restaurants and retail food stores, did not authorize plastic boards or specify how plastic surfaces should be maintained.

Furthermore, researchers found that disease-causing bacteria such as E. coli and Salmonella could not be recovered from new bamboo cutting boards even shortly after they were put there. The bacteria placed by researchers on bamboo cutting boards did not multiply and gradually died. However, the surfaces of new plastic boards enabled the bacteria to persist.

Comparing the bacteria found on bamboo cutting boards, to those found lurking on plastic ones, when both have been cleaned manually, the researchers found more bacteria on a used plastic surface than on a used bamboo cutting board.
